Light and Healthy Salads

Your Inner Chef

Simple Greek Salad

Romaine lettuce

Spinach leaves

Fresh Basil, chopped coarse

Crumbled feta cheese

Whole cherry tomatoes

Red onion slices

Dried oregano

Olive oil

Banana Pepper rings (optional)

Whole black olives (optional)

Tear romaine lettuce into bite size pieces. Add in whole spinach leaves and coarsely chopped basil leaves. Rinse tomatoes, olives and banana peppers and add to salad. Add onion slices. Top with crumbled feta cheese, dried oregano to taste and drizzle with olive oil.

I found this next recipe on Pinterest. Had to share! It was delicious! I added diced red and yellow pepper. And I used more cilantro than in called for. I will post my version and include the link to the original version.

1 15.5 oz can black beans, rinsed and drained

9 oz frozen corn, thawed

1 tomato, chopped

1 small hass avocado, diced

1/2 cup red onion, chopped

peachesPeaches, watermelon, tomatoes and herbs – can you think of any other fresh foods that remind you more of summer? Now, imagine combining them all into one amazing recipe. If you’re planning on grilling out or entertaining guests this weekend, you might want to add this simple, fruity salsa to your menu.

Ingredients:

2 cups of seedless watermelon

1 to 2 cups of peeled peaches

3 cups of baby tomatoes

1/3 cup of chopped green onion or chives

1/3 cup of chopped basil

1/4 cup of lime juice

1/2 cup of pepper jelly

Salt and pepper to taste

Directions:

1. Dice peaches and watermelon.

2. Mix peaches, watermelon, basil, green onion, lime juice and pepper jelly together in a large bowl.

3. Slice tomatoes in half and season with salt and pepper.

4. Pour salsa over tomatoes and serve in individual bowls or glasses.

5. Enjoy!

Make YOUR own, Grill with OUR BBQ

Make your own Burger, and Grill with one of our BRAND NEW bbq’s. 

Ingredients

  • 450g/16oz lean beef mince

  • 2 garlic cloves, crushed

  • 1 tsp tomato ketchup

  • 1 tsp mustard

  • 1 egg, lightly beaten

  • 1 red chilli, finely chopped

  • 1 small onion, finely diced

  • 2 spring onions, sliced

  • handful basil leaves, chopped

  • olive oil for frying

Preparation method

  1. In a large bowl mix together the mince, garlic, tomato ketchup, mustard, egg, chilli and onion.

  2. Dive in with your hands and mix until the ingredients are well blended.

  3. Just before cooking, add the spring onions and basil to the mixture and divide into four patties.

  4. Heat a little olive oil in a large non-stick frying pan and fry the burgers.

  5. Turn them once only, cooking for about 5-6 minutes each side. (Alternatively you can cook them under a grill for the same time turning half way through.)

  6. Serve with burger buns and salad.

Spicy beef burger
